Suutei Tsai Recipe (Mongolian Salted Milk Tea)

Suutei Tsai is a traditional Mongolian beverage made with tea, milk, and salt. It is often compared to a thin soup due to its savory and nourishing profile.

Yields: Approximately 4 servings

Ingredients

  • 4 cups water
  • 2 tbsp loose-leaf black tea (or 2 black tea bags)
  • 2 cups whole milk (fresh whole milk is traditionally preferred)
  • 1 tsp salt (adjust to taste)
  • Optional: 1 tbsp butter or cream for extra richness
  • Optional: Toasted millet or rice

 

Instructions

  1. Boil the Water: In a medium saucepan, bring the water to a boil.
  2. Add the Tea: Add the tea leaves or tea bags to the boiling water and let it boil for 2–3 minutes.
  3. Add Milk and Salt: Reduce the heat, stir in the milk and salt, and mix well.
  4. Simmer and Aerate: Bring the mixture back to a gentle simmer. Traditionally, Mongolians aerate the tea by scooping up ladles of the liquid and pouring it back into the pot from a height. This helps mix the ingredients and creates a creamier texture. Continue this process for 3–5 minutes.
  5. Adjust and Serve: Taste and adjust the salt if necessary. For a richer drink, stir in the butter or cream. Strain the mixture to remove the tea leaves (if using loose-leaf) and serve hot in small bowls.

 

Note: Suutei Tsai is a comforting and nutritious drink, often enjoyed with meals or snacks like fried dough biscuits.
