Kashmiri Kahwa Recipe

Kashmiri Kahwa is a comforting, aromatic green tea traditional to the Kashmir Valley, infused with warm spices and garnished with almonds.

 

Ingredients

  • 2 cups water
  • 1 small cinnamon stick (about 1 inch)
  • 2 green cardamom pods, lightly crushed
  • 1 whole clove (optional)
  • 5-6 dried rose petals (optional)
  • 10-12 saffron strands, plus extra for garnish
  • 1 tsp loose-leaf green tea (preferably Kashmiri green tea)
  • 2 tsp sugar or honey, to taste
  • Slivered almonds for garnish

Instructions

  1. Boil water and spices: In a small saucepan, bring the water to a boil. Add the cinnamon, crushed cardamom, clove (if using), and dried rose petals (if using). Let it simmer on low heat for 3 to 4 minutes to allow the spices to release their aroma.
  2. Add saffron and sweetener: Add most of the saffron strands and the sugar or honey to the boiling water and stir well. Let the mixture simmer for another minute or two.
  3. Steep the green tea: Turn off the heat. Add the green tea leaves to the pot. Cover and let it steep for 2 to 3 minutes. Tip: Do not over-steep or boil the green tea leaves, as this can make the tea taste bitter.
  4. Finish and serve: Strain the tea into cups using a fine-mesh strainer. Garnish each cup with a few slivered almonds and a couple of extra saffron strands.
