🍵 Buckwheat Tea Recipe (Soba Cha)

Buckwheat tea, also known as Soba Cha (in Japan) or Memil Cha (in Korea), is a naturally caffeine-free tea with a light, toasted flavor and numerous health benefits.

🌾 Ingredients

  • 1 tablespoon roasted buckwheat (toasted groats)
  • 1 cup (approx. 250 ml) water

⚠️ Important: Despite its name, buckwheat is gluten-free.

🔥 Hot Brew Instructions (Infusion)

  1. Boil the water.
  2. Place the roasted buckwheat in a cup or teapot.
  3. Pour the hot water over the groats.
  4. Cover and let it steep for 3 to 5 minutes.
  5. Strain (if desired) and serve.

👉 The groats can be reused 1 or 2 times, depending on your preferred strength.

Cold Brew Instructions (Iced Version)

  1. Combine 1 tablespoon of roasted buckwheat with 2 cups (500 ml) of cold water.
  2. Refrigerate for 6 to 8 hours.
  3. Strain and serve chilled.

This version is very popular during the summer and has an even milder flavor.

🌰 How to Roast Buckwheat at Home (Optional)

If you have raw buckwheat groats:

  1. Heat a skillet over medium heat.
  2. Add the raw buckwheat (do not use oil).
  3. Stir constantly for 5 to 7 minutes, or until it becomes golden brown and aromatic.
  4. Let it cool completely before storing.
